Banana Blueberry Pancakes

Banana Blueberry PancakesOkay, so my healthy kick is in full swing, but it was Pancake Day! What did I do? I made healthy, dairy free and gluten free pancakes with fruit and eggs of course. I actually came across this idea a VERY long time ago and haven't looked back. These pancakes are fluffy and delicious and can be served up in many different ways. Here's what I did today!



  • 1 large banana
  • 2 eggs
  • Vanilla essence
  • Blueberries
  • Coconut oil


  1. In a medium sized bowl, mash the banana as thoroughly as you can - you want it really smooth.
  2. Vigorously beat the eggs into the banana. Add in a dash of vanilla essence and keep beating. It will look just like a regular batter.
  3. Gently stir in a handful of blueberries.
  4. Heat a little coconut oil in a pan and pour in some of the batter. When it starts to bubble on top, flip it over and cook for another 30 secs - 1 min (until it is slightly coloured underneath). Remove to a warmed plate and repeat until the batter is used up.

Serve with more blueberries and maple syrup, or anything else you fancy!
